Jerusalem artichoke croquette, sautéed chanterelles

Octopus tentacle and smoked Brussels sprouts with pine aromas,
served with a small vegetable tart and fresh garden herbs

Scallops, quinoa, spinach, Granny Smith apple, and shallot salad,
dandelion leaves, and Saint-Jacques shellfish cream

Trumpet mushrooms and hedgehog mushrooms sautéed in Provençal olive oil,
oven-dried apricot, roasted hazelnuts, smoked celeriac with hazel leaves
