Walnut tartlet, roasted butternut squash and coing
Jerusalem artichoke croquette with crispy chips

Turbot flan, rich consommé, cardoons
Mackerel tartlet marinated in red wine vinegar, persimmon and Granny Smith apple

Matured scallops with kombu, shellfish jus cream,
virgin rapeseed oil and cima di rapa leaf coulis

Squid and AOP mussels from Mont-Saint-Michel Bay,
Brussels sprouts, light sea jus and parsley oil

Quail and wild mallard ballotine with foie gras,
light quail emulsion, wild duck jus, chanterelles and beets

Roasted venison, loin and leg, reduced jus,
hibiscus-braised endive, parsnip and salsify

Clementine, Angel cream and almond crumble,
finished with a Grand Marnier sauce

Chestnut beignet filled with custard,
